Classic Laddie

Mark started off with the unpeated, multi-vintage, American oak Classic Laddie. It has no coloring and is a non-chilled filtered whisky. It has the following aromas: barley sugars, fresh-cut flowers, vanilla, and green fruit such as apple and pears. It has beautiful essential oils in the cask and the non-filtered chilled round out the palette. It matches perfectly with natural oysters.

Port Charlotte

The Port Charlotte whisky is heavily peated. 40 parts non smoke, 60% 1st filled American whisky cask, and 25% wine cask. It has amazing aromas with fudge, citrus, honey, and coconut. Although it is heavily peated, the fruit smoke cuts it down that is why it binds well with the scallops.

Octomore 10.1

This is Mark Hickey’s personal favourite. It has vanilla, caramel, charred oak, and pineapple for its aromas. It is like a dessert wine. It is super heavily peated. It has a 107 PPM which can stretch up to 309.1 PPM. It is a sensational whisky that has beautiful flavours that will match perfectly with blue cheese.
