This classic Tiki cocktail drink featuring Mount Gay Black Barrel rum is a great refreshing summer drink and will transport you to the tropics.

45ml Mount Gay Black Barrel Rum
15ml Campari
15ml Fresh lime juice
15ml Simple syrup
90ml Unsweetened pineapple juice
Ice
Garnishes
Lime slices
Pineapple wedge
Mint leaf
Method

Pour ingredients into a cocktail shaker with ice cubes. Shake well, then pour into a chilled salt-rimmed glass.

Bartender's Tip

Strain over crushed ice for a summer twist. BBQ the pineapple wedge before garnishing, for a Smokey flavour.
