Every bartender has a story. Some fall into the trade by accident, others are drawn to it by an unshakable passion for creativity and connection. For Loic, winner of the Amaro Montenegro Vero Bartender Australian Final Competition 2025, bartending wasn’t his first love—cooking was. But as fate would have it, the front of house, the customer interaction, and the artistry of cocktail creation stole his heart, setting him on a path that would eventually see him take the national stage.
Loic’s career began in the kitchens of France, training as a chef before the allure of bartending took hold. What started as weekend shifts turned into a full-time career spanning multiple countries, including Germany, London, and ultimately, Toowoomba, Australia, where he now co-owns Sante Toowoomba with his partner, Alexandra.
“I still love cooking,” Loic admits, “but in the kitchen, you’re at the back. You don’t get to see the guests, the people experiencing what you create. Bartending gives me that instant feedback, that connection, and that’s what I thrive on.”
Loic isn’t new to competitions. He’s entered a few, but he doesn’t enter just to win but also to meet like-minded industry professionals. “I love the social aspect of competitions,” he says. “It’s not just about the drinks—it’s about meeting new people, learning from others, and being part of a global bartending community.”
Having competed in Vero Bartender prior, Loic was no stranger to the challenge. But this year’s theme—Projecting the Future—pushed him beyond his comfort zone. “I usually work with seasonal, fresh ingredients, and this brief forced me to think beyond what’s available right now. It made me stretch my creativity in a way I hadn’t before.”
