But this year’s theme—Projecting the Future—pushed him beyond his comfort zone. “I usually work with seasonal, fresh ingredients, and this brief forced me to think beyond what’s available right now. It made me stretch my creativity in a way I hadn’t before.”

He developed an effervescent tablet that dissolved into the drink, inspired by memories of his mother making homemade cleaning tablets. “I realized that if I removed the chemical elements, I could create something consumable, something interactive. That’s when the idea really clicked.”

Beyond the show-stopping visual appeal, the cocktail itself stayed true to the essence of Amaro Montenegro. “Competitions are about the brand. You have to respect the history and craftsmanship of the spirit you’re using. That’s something I always keep in mind.”

According to Loic, preparation is everything. “One of the first people who inspired me in the industry told me—‘It’s not always the best drink that wins, but the bartender who is the most prepared.’ That stuck with me. I read the brief carefully, I made sure every element tied back to the theme, and I practiced relentlessly.”

His advice for aspiring competitors? Just do it. “The first few competitions, don’t worry about the result. Just put your ideas out there and get feedback. That’s how you improve.”

With his national win under his belt, Loic is now preparing for the Vero Bartender Global Final—a whole new level of competition. “I need to refine my presentation, tweak my drink, and fine-tune my timing. The competitors, judges, and even palates will be different. It’s about adapting while staying true to the essence of what I created.”

But win or lose, Loic is already reaping the rewards. “The connections I’ve made, the people I’ve met—that’s the real prize. Competitions push you to be better, but they also bring the industry closer together.”
