Introducing The Macallan Room at Emirates One&Only Wolgan Valley, a bespoke sensorial whisky experience at the ultra-luxury resort in Australia’s Greater Blue Mountains.  

The Macallan Room at Emirates One&Only Wolgan Valley has been designed to bring to life the rich stories and heritage of the two brands, which share equal values to pursue excellence and exquisite craftsmanship. Guests of the resort will experience The Macallan story through a sensorial journey, exploring the extraordinary legacy and expertise of the world’s most incomparable Single Malt Scotch whisky. Whisky connoisseurs will have the chance to immerse themselves in the world of The Macallan while tasting some of the finest range of exquisite single malts available, including limited editions, new releases, rare expressions, and archival products from the resort’s exclusive ‘vault’, including the celebrated M Collection, that promises a journey of discovery and intrigue.

Emirates One&Only Wolgan Valley’s resident chef, Pitam Gurung, will carefully curate a series of seasonal menus throughout the year to pair perfectly with the selection of fine whiskies. This one-of-a-kind menu series will feature seasonal produce grown in the Emirates One&Only Wolgan Valley chef’s garden, foraged from the reserve and sourced from the best of the region’s specialty farmers and producers.

The Macallan James Bond 60th Anniversary Release 

The Macallan @ Emirates One&Only Wolgan Valley officially unveiled The Macallan’s James Bond 60th Anniversary Release marking six decades of James Bond. The remarkable collection comprises six limited edition bottles encasing a single malt whisky in unique packs, each featuring an original illustrative design and colour denoting the decade it represents. The distinctive packaging brings to life the creative development process of the films in a behind-the-scenes exploration of the James Bond archives.

The Macallan James Bond 60th Anniversary Release 

ABV: 43.7% 

Nose: Fresh and vibrant notes of lemon and lime, a sprinkle of sherbet, leading into sweet vanilla and coconut, with a hint of dried fig and raisin. Palate: Orange zest and fizzy sherbet with a lemon freshness, gentle oak and subtle ginger spice, leading into deep dark chocolate, figs and baked apple tart with a honey drizzle. Finish: Sweet and long with complex layers.
